Spiced Roasted Cauliflower

November, 2017

Tired of making the same old vegetable side dishes?

If so, here is a delicious, simple cauliflower recipe you can add to your rotation!

I love how versatile cauliflower is.  In my opinion it has a milder flavor which really allows it to soak in the flavor of its seasoning.

I got this roasted cauliflower recipe from a friend a few years ago and it has become a keeper.  The combination of sweet and savory is just perfect.

Veggie Quinoa Crunch

March, 2017

Cheesy Riced Cauliflower

I’m very excited to tell you about my latest discovery – riced cauliflower.

Basically, it’s cauliflower shredded down into crumbles that resemble rice.  And the best part? You can buy it already riced!  So far I’ve seen it in two places:  Whole Foods and Trader Joe’s. You can bet that it’s much cheaper at Trader Joe’s so you might want to try there first.  Trader Joe’s also has frozen riced cauliflower in addition to fresh, so I highly recommend always having a bag or two in your freezer for days you want to whip up a quick veggie dish.

Zucchini Spaghetti with Eggplant Garlic Spread

I live for the Veggetti.  It’s this cute little gadget that makes veggies turn into spaghetti!  It is so easy to use and takes less than one minute to spiralize one zucchini.

Once I spiralize it, I saute it up with some olive oil and sea salt, and add some type of pre made sauce.   EASY.  QUICK.  HEALTHY.  Right up my alley.

Today I want to share my newest discovery from Trader Joe’s.  (Click here to see how I feel about Trader Joe’s.)
