Baked Mushroom Burgers

Best.  Vegetarian.  Dinner.  Ever.

In fact, this is one of the very few healthy, vegetarian dinners both my husband AND kids love.

(OK, that is a tad exaggerated. My husband LOVES them and my kids LIKE them, but enough so that I don’t have to make a separate dinner for them – which let’s face it – is all that counts!)

These mushroom burgers are easy to make, especially if you use the time saver tips I mention below.  

I usually prepare the mushroom mix during the day so all I have to do in the evening is bake them.

Be sure to top these bad boys with tomato and avocado slices for some extra nutrition and delicious flavor!

Cauliflower Crust Pizza

Pizza night.  We have it once a week.  Let me set the picture:

The kids get Amy’s pizza with a side of edamame (for some protein) and a serving of vegetables while I concoct something a bit more nutritious for me and Brian.  Then, for the entire dinner we both longingly eye our children’s plates hoping for a bit of leftover scraps.

Sad, right?

Healthy, Kid Friendly Smoothie

Sometimes I wonder if other people get as much pleasure as I do from seeing their children eat healthy food. There is just something so reassuring about it, knowing that vitamins and nutrients are being flooded through their growing bodies.

Luckily, on these hot, summer August days, smoothies are a big hit in my home.  My ‘go to’ smoothie for my kids contains almond milk, some frozen or fresh berries, and a bit of raw honey.  Berries are high in fiber, potassium, and vitamins A and C.  My kids love the taste and I love the nutrition.

Just recently I decided to take a chance by adding one more ingredient to their smoothies, hoping they wouldn’t notice.
