Cheesy Riced Cauliflower

I’m very excited to tell you about my latest discovery – riced cauliflower.

Basically, it’s cauliflower shredded down into crumbles that resemble rice.  And the best part? You can buy it already riced!  So far I’ve seen it in two places:  Whole Foods and Trader Joe’s. You can bet that it’s much cheaper at Trader Joe’s so you might want to try there first.  Trader Joe’s also has frozen riced cauliflower in addition to fresh, so I highly recommend always having a bag or two in your freezer for days you want to whip up a quick veggie dish.

Zucchini Spaghetti with Eggplant Garlic Spread

I live for the Veggetti.  It’s this cute little gadget that makes veggies turn into spaghetti!  It is so easy to use and takes less than one minute to spiralize one zucchini.

Once I spiralize it, I saute it up with some olive oil and sea salt, and add some type of pre made sauce.   EASY.  QUICK.  HEALTHY.  Right up my alley.

neat: A Healthy Replacement for Meat

I want to preface this post by letting you know that I do not receive any type of compensation for writing about specific food products.  I am always trying new, healthy foods and get so excited when I find ones I love and want to report back to you and give you the scoop!

I am not a vegetarian.  Yes, I love vegetables and eat tons of them, but I still enjoy meat sometimes too.  That said, since I don’t make meat the ‘star’ of every meal, I like finding delicious alternatives.
