Veggie Quinoa Crunch

The other day my family visited my brother and sister-in-law and enjoyed quite a feast.  Upon returning home I decided it was the perfect night for a healthy, quinoa dish.

There are endless ways to prepare quinoa.  Hot.  Cold.  With veggies.  With meat.  Nuts, seeds, cheese….

Slow Cooker Vegetarian Chili

I was a slow cooker virgin.  I’d heard such great stuff about slow cookers and how easy they are to use.  I actually attempted to buy one in Bed Bath and Beyond. Twice.   But I think I had a case of analysis paralysis.  Do I buy a 4 quart?  a 6 quart?  Do I get one with fancy features like steaming and browning?

Pesto, Tomato, & Mozzarella Sandwich

This is my favorite vegetarian sandwich:  pesto, tomatoes & mozzarella.  Lucky for me, my husband feels the same way and is happy that I serve it for dinner once per week!  Unfortunately my kids are allergic to nuts so they can’t have pesto, but I just make it for them without it.

It’s super simple, and I make some type of baked vegetable to go with it to make the meal feel more substantial since it’s for dinner.

You COULD go nuts and make your own pesto, but the store bought ones I’ve found are so delicious and relatively ‘clean’ so I choose not to and instead choose to make it the easiest dinner night ever.  I’ve used the basil pesto made by Whole Foods and by Cibo Naturals and they are both delicious.

Baked Mushroom Burgers

Best.  Vegetarian.  Dinner.  Ever.

In fact, this is one of the very few healthy, vegetarian dinners both my husband AND kids love.

(OK, that is a tad exaggerated. My husband LOVES them and my kids LIKE them, but enough so that I don’t have to make a separate dinner for them – which let’s face it – is all that counts!)

These mushroom burgers are easy to make, especially if you use the time saver tips I mention below.  

I usually prepare the mushroom mix during the day so all I have to do in the evening is bake them.

Be sure to top these bad boys with tomato and avocado slices for some extra nutrition and delicious flavor!

Riced, Riced, Veggies!

When it comes to healthy eating, my motto is eat this, not don’t eat that.

Raise your hand if you know what the “this” is??

Yes, smarty pants!  It’s VEGETABLES!  By now I’m sure you guys know I’m completely obsessed with getting enough vegetables into my diet.  Most Americans don’t even come CLOSE to the ideal amount of vegetables that need to be consumed in a day – anywhere between 6 1/2 and 13 1/2 CUPS!
